i love breakfast!

sunday morning breakfast is one of my favorite things! generally, i love breakfast, but there’s something about sunday morning breakfast that makes it all the more special. V decided to wake up terribly early this morning. 5:45am is not the appropriate time for full sunday morning breakfast.

once she’s up from her nap, it’s second breakfast time! we are going to have bacon from the butcher, eggs from the farm and baguette from the supermarket. (i ran out of home made cuban bread and it’s hard to find time to bake with no back-up parent.) i’m glad she’s sleeping, but i’m really hungry and looking forward to our sunday morning feast.

i should also note that i get extremely productive when V gets up this early and takes her morning nap before 8am. i’ve cleaned up the kitchen, emptied the dishwasher and i’m roasting the chicken breast for our chicken salad dinner tonight. i feel like i have to take my moments when i have 2 hands at my disposal and accomplish everything on the list at once.

UPDATE: we had a brief change of breakfast plans. i found one lonely tortilla left over from tacos last week so in lieu of baguette i had a wonderful breakfast taco with bacon and scrambled eggs. V had the same minus tortilla and plus berries. yum!

    We have a hard time coming up with *new* breakfast ideas…I attribute it to my 3 years of getting up at 4:30 for work and stopped eating breakfast…

      i usually go with the basics: breakfast meat, eggs and bread of some sort. i think the most out of the ordinary breakfast meal we’ve eaten is a variation on a frittata.

      in a medium oven-safe skillet, take a sausage out of its casing and cook through. (chorizo works best, i think.) toss in some left over boiled potatoes and heat briefly. stir in 1/2 a dozen eggs whisked and seasoned with salt and pepper.once the eggs start to set, put the skillet in the oven (heated to 400 degrees) until the eggs have completely set and the top is starting to brown.

      i’m allergic to cow’s milk, but cheese would be an excellent addition. this makes 2 sizable portions. good luck!
