saturday night dinner: scallops with orzo salad

hello world,

MHM went to the market without me and V satuday morning. it was nap time and clearly a better decision to let V get a nap than get to the market. however, he came home with scallops for dinner! here’s how to do it your self:

orzo salad with summer vegetables

ingredients: 1 pound orzo (cooked to instructions on box), 1/4 cup olive oil, 2 small zucchini, 2 baby eggplants, 1/2 cup chopped sun dried tomatoes (re-hydrated), 2 large cloves of garlic (smashed), 2-3 tbsp pine nuts, red pepper flakes to taste, juice of 1/2 a lemon, 2 tbsp chopped parsley, salt and pepper to taste

  1. chop zucchini and eggplant into 3/4 inch cubes
  2. heat oil in a large non-stick skillet on medium
  3. add garlic and cook until golden
  4. saute zucchini and eggplant until cooked through, season with salt
  5. stir in sun dried tomatoes, pine nuts and red pepper flakes, adjust salt and pepper to taste
  6. remove from heat, then stir entire contents of the skillet in with the orzo (add oil if necessary)
  7. add lemon juice and parsley (depending on your taste, you may want to add more lemon juice)

pan seared scallops

ingredients: 1 lb fresh sea scallops (we got 14 count), 2 tbsp olive oil, 1/2 cup dry white wine, salt and pepper to taste

  1. heat oil in a large pan on high heat (preferably not non-stick)
  2. add scallops and let sit for 3-4 minutes depending on the size of your scallops
  3. carefully turn to sear the other side and cook for another 2-3 minutes
  4. add wine and reduce
  5. serve immediately with remaining pan sauce

for us, this was a perfect saturday night meal. V ate 2 entire scallops and huge handfuls of the orzo salad. i cut the zucchini into baby sized pieces, peeled the skin off the eggplant and she shoveled it in. with the scallops, i cut the seared top and bottom off because she doesn’t have enough teeth to get through it, but she seemed to really like the inside part.

    On the scallops, you may want to add minced shallot and parsley just before the wine. I would have done that, but I didn’t have shallots or parsley handy.
